Red Beans & Rice

Ingredients

  • 1 lb dried red kidney beans

  • 1 ham bone

  • 2 quarts water

  • 1 lb country sausage, diced

  • 3 cloves garlic, minced

  • 1 1/2 C chopped onion

  • 1 1/2 C chopped celery

  • 2/3 C chopped green onions

  • 1 bay leaf

  • 1 tsp worchestershire sauce

  • 3 tsp Tabasco

  • 1 TBSP parsley, chopped

  • 1 1/2 tsp salt

  • 2/3 C green pepper

  • 3-4 C rice

Directions

  • Rinse beans well and drain. Put beans, ham bone, and water in a large pot and bring to a boil. Reduce heat and simmer 40 minutes.

  • Add sausage and cook, covered, over low heat for 1 hour, stirring occassionally.

  • Add garlic, onion, celery, green pepper, green onion and bay leaf.

  • Continue cooking, covered, over low leat for 1/2 hours until beans are soft.

  • Add Worcestershire sauce and Tabasco, parsley and salt. Simmer over low heat for 5 minutes.

  • Remove bay leaf and serve with rice.
