Red Beans & Rice
Recipe from NoLa. Make each time family visits Wendy & Rick.
Ingredients
1 lb dried red kidney beans
1 ham bone
2 quarts water
1 lb country sausage, diced
3 cloves garlic, minced
1 1/2 C chopped onion
1 1/2 C chopped celery
2/3 C chopped green onions
1 bay leaf
1 tsp worchestershire sauce
3 tsp Tabasco
1 TBSP parsley, chopped
1 1/2 tsp salt
2/3 C green pepper
3-4 C rice
Directions
Rinse beans well and drain. Put beans, ham bone, and water in a large pot and bring to a boil. Reduce heat and simmer 40 minutes.
Add sausage and cook, covered, over low heat for 1 hour, stirring occassionally.
Add garlic, onion, celery, green pepper, green onion and bay leaf.
Continue cooking, covered, over low leat for 1/2 hours until beans are soft.
Add Worcestershire sauce and Tabasco, parsley and salt. Simmer over low heat for 5 minutes.
Remove bay leaf and serve with rice.
