Pumpkin Soup

We loved it when Jane would make this for us! We have experimented with adding boiled potatoes and peas and that is an excellent variation!
Ingredients
4 Tablespoons butter
3 Garlic cloves, diced
1 Large onion, diced
1 ¼ teaspoons curry powder
½ teaspoon salt
¼ teaspoon cayenne pepper
3 cups Chicken broth
1 can pumpkin (16oz)
3 Tablespoons Brown sugar
Directions
Melt butter in a large saucepan, and saute onions till golden brown.
Add garlic and cook till toasty.
Add curry powder, salt, coriander, and cayenne pepper simmer gently for 2 minutes.
Stir in broth and simmer, partially covered, for 20 minutes.
Add pumpkin, and stir until smooth.
Add evaporated milk and brown sugar. Heat over medium heat for 5 minutes don’t allow soup to boil.
Blend with immersion blender till smooth
