Pumpkin Soup

We loved it when Jane would make this for us! We have experimented with adding boiled potatoes and peas and that is an excellent variation!

Ingredients

  • 4 Tablespoons butter

  • 3 Garlic cloves, diced

  • 1 Large onion, diced

  • 1 ¼ teaspoons curry powder

  • ½ teaspoon salt

  • ¼ teaspoon cayenne pepper

  • 3 cups Chicken broth

  • 1 can pumpkin (16oz)

  • 3 Tablespoons Brown sugar

Directions

  • Melt butter in a large saucepan, and saute onions till golden brown.

  • Add garlic and cook till toasty.

  • Add curry powder, salt, coriander, and cayenne pepper simmer gently for 2 minutes.

  • Stir in broth and simmer, partially covered, for 20 minutes.

  • Add pumpkin, and stir until smooth.

  • Add evaporated milk and brown sugar. Heat over medium heat for 5 minutes don’t allow soup to boil.

  • Blend with immersion blender till smooth
