AD Chocolate Cake

AD’s mom always made this cake for special occasions. The family usually requested it for birthdays!

Ingredients

  • Devil’s food cake mix

  • ⅓ C granulated sugar

  • ½ C vegetable oil

  • 1 C water

  • 4 eggs

  • 2 C whipping cream

  • 2 tbsp confectioner’s sugar

  • 1 package frozen raspberries, thawed

  • 12 oz semi-sweet chocolate chips

  • ¾ C butter, room temperature

Directions

  • Preheat oven to 325°.

  • Combine cake mix, granulated sugar, oil, water and eggs.

  • Pour into three 8 inch rounds, greased and floured.

  • Bake for 20 min or until done.

  • Bring 1 C whipping cream to a boil, then stir chocolate chips until melted, use whisk.

  • Cool until room temperature.

  • Whisk into chocolate mixture room temperature butter. Leave until room temp then put in fridge. Allow time to cool completely.

  • Whip 1 C whipping cream and confectioner’s sugar until stiff peaks.

  • Mash raspberries.

  • Assemble cake in the following layers- Cake, whipping cream, cake, raspberries, cake. Then frost with gnache.
